Pancake day has been and gone but that doesn't mean the fun is over. I am of the opinion that pancakes should not be confined to one dull and dreary February day, but freely enjoyed whenever it takes your fancy. In fact, I eat so many I'm quite surprised I haven't turned into one (or, rather, evoked some sort of pancake-related obsesity).
Perhaps this is because my go-to recipe for pancakes comes in at under 150 calories and is packed with a whole 8.2 grammes of protein to keep away those hunger pangs till well after lunch.
I follow this simple and extremely versatile recipe almost every weekend. When I'm feeling angelic I pile mountains of fresh strawberries and blueberries on top and serve with more FAGE Yoghurt and a drizzle of honey. When I'm feeling naughty, I slather my pancake stack with Nutella and top with warm cherries. If I'm feeling creative I opt to use a pancake mould and create some of my favourite disney characters. But most importantly, If I am feeling utterly ravenous, I enjoy doubling this recipe and feeling 100% guilt free.

20g Rolled Oats
50g FAGE Total 0% Yoghurt
1 egg
Sprinkle of Stevia or Sweetener
Optional Extras/Toppings
Cinnamon
Cocoa powder
Chocolate chips

3.) Here is where you'll need your mould. I bought mine in Florida but you can also find it here on ebay. Pour mixture into the mould in a lightly oiled heated pan (or use Firelight, if you'd prefer).
4.) Cook the pancakes on a medium heat for approximately 2-3 minutes or until golden on one side.
5.) Remove mould and flip.
